Ingredients
- 2 pieceMedium bananas
- 0.3 cupCreamy peanut butter
- 0.5 cupDark or semi-sweet chocolate chips
- 1 teaspoonCoconut oil (optional, for melting chocolate)
- 1 pinchFlaky sea salt (for sprinkling)
Instructions
- 1
Line a baking sheet with parchment paper. Peel the bananas and slice them into approximately 1/4-inch thick rounds.
⏱ 3 min - 2
Spread a small amount of peanut butter onto one side of each banana slice. Pair them up, pressing two peanut butter-coated sides together to form mini sandwiches.
⏱ 5 min - 3
Place the banana peanut butter sandwiches on the prepared baking sheet and freeze for at least 15 minutes to firm up.
⏱ 15 min - 4
While the bananas are freezing, melt the chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring until smooth, or over a double boiler. If desired, stir in the coconut oil for a smoother consistency.
⏱ 2 min - 5
Remove the frozen banana bites from the freezer. Dip each bite halfway into the melted chocolate, or drizzle chocolate over them. Return them to the parchment-lined baking sheet and immediately sprinkle with flaky sea salt.
⏱ 5 min - 6
Place the chocolate-covered banana bites back into the freezer for at least 30 minutes, or until the chocolate is fully set. Store any leftovers in an airtight container in the freezer.
