Simple Sautéed Zucchini and Lemon Pasta
This super easy pasta dish brings together tender sautéed zucchini with bright lemon zest and juice, creating a light yet satisfying meal perfect for any weeknight. It's quick to prepare using common supermarket ingredients, making it an instant favorite.

Bring a large pot of salted water to a rolling boil. Add the linguine or spaghetti and cook according to package directions until al dente, typically 8-10 minutes. Before draining, reserve about 1/2 cup of the starchy pasta water.

While the pasta cooks, slice the zucchini into thin half-moons and mince the garlic. Heat the olive oil in a large skillet or frying pan over medium heat. Add the sliced zucchini and sauté for 5-7 minutes, stirring occasionally, until tender-crisp and lightly browned.
