- 1 inch piece, peeledGinger

Thoroughly wash and roughly chop the fresh cilantro and parsley. Remove the leaves from the thyme sprigs. Peel the garlic and ginger. Remove the stem and seeds from the bell pepper and habanero (handle habanero with gloves if sensitive). Peel and roughly chop the onion.

Add all the prepped herbs, garlic, ginger, bell pepper, habanero, and onion into a food processor.

Pour in the lime juice, white vinegar, and vegetable oil. Add the ground allspice, salt, and black pepper.

Process on high speed until all ingredients are finely minced and form a vibrant, relatively smooth paste. You may need to scrape down the sides of the food processor a few times to ensure even blending. The consistency should be thick but spreadable.
